Fan-Frickin’ French Toast

I was laughing so hard when my wife asked me what to name it! That phrase was the only desription shining on the screen of my mind. The taste was that good. This meal was the first I tried using the Young Living Vitality Oils (YLVO).  I took my moms hand me down recipe, opened up the YLVO culinary collection kit, to see what oils would work.  Having no idea about the cookability of these oils, flavors, quantities, etc….I took a stab….What follows is an adjusted, unbelievable, flavor haunting, French Toast recipe. I’m not kidding when I say these flavors haunt me. At any rate, as with all these recipes, you don’t need the oils, but they do help. In parentheses is a substitue for the oil. Enjoy and do something nice today

Ingredients:

3 Eggs

3/4 Cups milk

1/3 Cup brown sugar

1/4 Tsp salt

1 Tsp cinnamon

4 Drops YLVO Cinnamon bark oil (if none, dbl cinnamon to 2tsp)

2 Drops YLVO Lemon oil (if none, add 1.5 tsp lemon juice)

9 slices of texas toast or whatever favorite bread

Instructions:

Thouroughly mix the eggs, milk together first. Next add the sugar, salt and cinnamon. Lastly add the oils or subtitutes.

Heat a  large non stick or cast iron pan to medium heat, melt a table spoon of butter. Dip your bread into the battter on both sides then gently place on pan. Cook until browned on both sides, 3-4 minutes

Serve with Syrup, powdered sugar or whatever you like.

 

Are You Kidding Me

I’m here in Sundance. If you’ve never been, you need to…

Absolutely beautiful….waterfalls, wildlife, stimulation to

all senses. You immediately feel entrenched with nature.

Resistance is futile. Completely surrounded by majestic peaks

at every turn, your existance seems heightened and your place

within defined. This place indeed moves you…..

We are blessed enough to be sharing this with our family

including my sister and brother law. She is demonstrting

her latest wares with my wife….Essential Oils. Being hardened

by the daily invasion of telemarketers, junk mailers, cialis

pushing mongrels, I quickly discard the neighboring conversation

to immerse myself into all that is tangible and present; Sundance.

What to do first? River raft, zip lining, hiking, Mt. Biking….

I’m giddy with excitement, the eye candy at my finger tips,

but first, I must retreat and herd the group together….

Upon my rentry into the cabin, you are reminded of

old world Italian eateries with Basil and Oregeno aromas…

Susan, my sister n law is demonstrating the newest and latest

wares of Essential Oils….to me, the Modern day version of

snake oil. Yes I am quite dubious….well, in all honesty, was..

Both my wife and I were doubtful of these oils until she tried them.

She has been having cirulation/nerve issues in her extremities, more

specificly, her feet. More than likely brought on with diabetic type

issues….at any rate, besides hiking and diet helping, she began

researching, and came up with a combo of these oils to aid in her

ailments….to make a long story short, it worked….not only that,

it continues to work. This and other introductions to these oils

have made believers out of me and my family…..no, Im not wearing

my onion shaped foil hat, I dont follow astrology, and could care

less if a black cat crosses my path….Im starting to see what the

fuss is all about with these oils.

Knowing of my love to cook and BBQ, I now have been given

a sampler plate of oils to try that are edible by design…are you

kidding me? Lol…..this will be interesting

But first, purpose has landed on Mt Biking as our next adventure.

Riding a full suspension bike down miles of single track upon the

slopes of Sundance….coupled with the chair ride….oh yeah.

I’m sure glad Redford saw this places and decided to preserve it,

it is such a treasured spot. Speaking of which, keep your eyes

open….you’re sure to see glimpses of the man himself darting

back and forth, slipping inside and out, as if a human Where’s

Waldo game…

Chicken Larb

In the midst of the great battle, eating better/tasting good, you must explore to find delightful solutions. One such arena of discoveries is Thai food. They introduce flavors not commonly coupled in western style influences, much to the gratitude of our taste buds…and also, very healthy…
With that in mind, this is one my first meals that hooked me on Thai. Though this dish is listed as a salad, I assure you that non-salad eaters alike will enjoy. This is Chicken Larb. This is a combination of ground chicken, shallots, mint leaves, lime, accompanied with raw cabbage, and it’s loaded with flavor. Best of all, hardly any carbs. It’s easy to do, fun, and very rewarding. So here we go…

Ingredients:

1 lbs. ground chicken
4+ garlic cloves ( 6 is fine) minced
2-6 Bird Chiles ( de Arbol work as well) little dark red peppers chopped finely
2 Shallots, sliced thin
3 tbsp diced green onions
2 tsp lemongrass, paste works fine
2 tbsp ground roasted rice * (Khao Kua Pon)
2-3 limes juiced
3-4 tbsp Fish Sauce
2 drops Young Living Vitality oil- Lime
1 drop (YLVO) Ginger
1 tsp sugar
……..Pre Steps…….
Combine all chopped veggies above in one bowl
Combine all liquids in its own bowl

Whole cabbage or shredded (coleslaw kits)

* asian markets sell this Khao Kua Pon, but you can make it. Heat a non stick pan, throw in some dry white rice and toast, frequently turning, until brown. Let cool a bit then grind. Food processor, old coffee grinder, etc works fine.

Cooking:

Heat large non stick or cast iron pan on medium, heat up tbsp of oil. Peanut or sesame oil is best but vegetable or olive will work. Cook chicken until no longer pink, drain and put into a large bowl. Let cool a few minutes.

Add garlic, green onion, shallots, chiles, lemon grass and mint leaves. Stir

Add Fish Sauce, YLVO’s, Lime Juice, and sugar. Stir

Add ground roasted rice, stir to evenly coat

Serving:

Most restaurants will serve this with a quartered cabbage head. You could either scoop the larb with cabbage leaves and enjoy like a lettuce cup, or mix in larb. I enjoy lining the bottom of a bowl with angel hair shredded cabbage, then placing larb directly in it, stirring….whatever your preference,there will be no escaping the clutches of its tastes….healthy taste.
The YLVO are nice to intensify the tastes while promoting a healthier life style.
